My daughter is alergic to egg. So we went to have her cooked egg challenge and she failed miserably. The next challenge is the baked egg challenge. Here is the recipes for the muffin.
The idea of the challenge is to give her a bit by bit until he finished one whole muffin. This is subject to no severe reaction due to the muffin consumption. If she develop some sort of itchiness or hive, rashes due to the consumption, stop and contact the doctor.
Feed small quantity first and wait for 20 minutes, to see whether there is any alergic reaction. The feed more 1/4 and wait another 20 minutes. Then feed slightly more than 1/4 and wait for another 20 minutes. And finished the rest of the muffin I’d there is no observed alergic reaction. My daughter survived the challenge by finishing the whole muffin without showing any alergic reaction. So the next part of the challenge is to continue feeding her with one muffin each day until 7 days. So I had to bake the muffin to the challenge, I hope you enjoy the recipes.

Ingredients

  • 100 gr butter melted
  • 160 gr sugar
  • 250 gr self raising flour
  • 150 ml Cow milk
  • 2 large size egg 50gr
  • 10 pcs Muffin cup

Instructions

  • Preheated conventional oven to 180 degree Celcius
  • Sift flour into the bowl
  • Add butter and sugar and mix until a lumpy batter is formed
  • Add the two eggs and milk into the mix
  • Combine ingredients until a smooth batter is formed
  • Place muffin cups into the tray
  • Distribute batter evenly into the 10 muffin cups
  • Bake for 10-25 minutes or until slightly golden brown and firm to touch
  • Muffin can be frozen for up to 3 months
  • You can add your favourite flavour such as berries, banana, Apple, etc.
